First time stopping by. I actually walked right by it. Looking for a Pho restaurant the last thing I would have looked for is a name like Roots Bistro LOL! The place was small and cozy and the perfect soup kitchen with tables available outside and inside. I walked in right before they close in the afternoon. I noticed some of the soup kitchens close in the afternoon and then open up again around 5pm for dinner time. Melissa the young cashier, waitress was great and took care of my cravings for a nice hot bowl of Beef Noodle soup. I ordered the all beef and went to NOM NOM town. The broth was perfect. Nice and clean. The sprouts and jalapeno's were good in the soup. Prices were perfect and fit my budget. I will be a regular at this place. Right next to my Massage Envy facility I go to every week. The weather is changing and getting colder so the bowl of hot soup hits the spot. The baby back ribs appetizer were screaming!! Falling apart on my fingers. Cooked in the oven for 3 hours. OMG!

Vegetarian Vermicelli Noodle is very good. Bold flavors with generous portions of tofu, onion, and green/yellow/red peppers. And it served hot! Usually at other restaurants, vegetarian vermicellis are bland with tiny tofu and all carb. Not here. The meat in Wagyu Pho Special is very good. The only downside is that Wagyu is a type of meat with more fat so the soup feels a bit greasy. There are many other dishes to try so we will definitely come back. Our seat is a bit dirty. Hope they are not too busy to clean up next time. (Edit to add pictures from the second visit) The vegetarian vermicelli is still great. We order two items from the sizzling menu and they are very tasty.

This is a new place in “The Plant” which was occupied by a Korean place before. The server was super friendly and apologetic. He forgot my tea and he delivered it after I reminded him, so he apologised and gave it to me for free! He was the only one serving everyone although there was not really a lot of customers needed to be served. It’s going to be tough competing with authentic Vietnamese dishes a few minutes away deep in mini-Vietnam towns. But, I’d be happy to support them once in a while. The food is enjoyable and the decor is lovely.

I found this Vietnamese restaurant by chance... but it was more delicious than I expected. The menu is unique and visually fun to look at. Very neat and friendly. I would like to praise it because it appears to have been developed independently. The spring rolls with fried pork dumplings and fried shrimp are especially delicious. Personally, I hope there will be more restaurants like this. I highly recommend you give it a visit.

Can here on an afternoon for the soft opening, while the restaurant was pretty empty. Ordered the Angus Beef Pho and the quality of ingredients was definitely top quality. Serving sizes were a bit smaller than what I am used to at other places, but just enough to fill me up. Service was excellent here and my server was exceptionally accommodating. Decorations were also well placed and matched the ambience of the place.

You've got to go. This is a place I'd expect to find on University Avenue in Palo Alto, but without their prices. Awesome food with a great atmosphere, reasonable prices, and in our backyard.

I'm not a fan of Pho. Or should I say, I wasn't a fan of Pho. Roots Bistro COMPLETLEY changed my mind about this dish. Absolutely blew my mind! Their Angus pho has an amazing umami balance of savory, sweet, and salinity provided in a VERY generous serving (I dare you to finish a bowl in one sitting!) The dish is bountiful and complemented with a wonderful herb bouquet of Thai basil and other aromatics alongside a healthy helping of bean sprouts. If you're in the area, I HIGHLY encourage a visit!

Wagyu pho was good. Meat was tender. Especially the rare wagyu. I added for the fresh noodles. It's definitely a good choice. Shrimp and pork spring rolls were fresh with a lot of lettuce. The area is good. If in the area, I will definitely dine here again.

Insanely good food and can’t beat the price, best taste, best value for money, best friendly service this is officially my favourite restaurant in San Jose and surroundings. I can eat that octopus salad everyday any day. Amazing Pho, definitely check it out.

Soft opening, still my secret spot for weekly Pho. I don't have to think or worry about my Saturday brunch from now. :) Very cozy, and clean and the two guys work quite smoothly. Organic tea was not on the menu, somehow but I like it. Please make it as regular.

It is Vietnamese cuisin place. The broth of Pho is rich but doesn't have enough Pho flavor and not enough basil . The plus is angus beef as their signature. It is a good place to try out. Friendly service. Recommended. I will come back to see if they improve taste later as support new local business.

Went here with friends. We order 1 phở and 1 bún thịt nướng. Phở is just okay, nothing special. Bún thịt nướng, the meat is too salty. Believe it or not.. I was sick on that day and still tasted of that salty from my tongue... the decoration is nice, the drinks is good.
